Fish or Pork Kilawin Recipe (Ceviche)

 

Kinilaw or Kilawin better known as Ceviche

Fish Kilawin Ingredients:

 

  • 1 kilo fish (Yellowfin Tuna or any other fish)

  • 1/2 cup vinegar

  • 2 medium onions, chopped

  • 3 tablespoons of ginger, chopped

  • 4 chili pepers

  • 8 pcs. kalamansi

  • 1 bottle Sprite (softdrink)

  • 4 cups of water

  • 1 tablespoon salt

 

Kinilaw na Isda (Fish Kilawin) Cooking Instructions:

 

  • Wash fish on a bowl

  • Marinate fish in Sprite for at least 10 minutes, drain after

  • In a big bowl, mix the drained fish, chopped onions, ginger, chili pepers, and vinegar. Salt to taste

  • Let the fish soak "cook" in vinegar for at least 30 minutes befor serving.

Kilawin, also known as kinilaw, is a traditional Filipino dish that shares similarities with Latin America’s ceviche. Kilawin and kinilaw are often used interchangeably. Kilawin refers to a type of dish where raw fish and sometimes meat is marinated in an acidic mixture of vinegar. In the Philippines, kinilaw is commonly enjoyed as an appetizer or a side dish during beer-drinking sessions (referred to as “pulutan”).
