Variety of Filipino dishesFilipino culinary arts is greatly influenced by Chinese, European, American, Arab and Asian cuisines. A fusion of various recipes adopted from earlier traders, Asian immigrants and former colonizers.

Before the Spaniards colonized the Philippines, the country's cuisine consisted of root crops, game, vegetables and seafood. Filipino food recipes then was almost always either boiled, roasted or broiled. Foreign trade brought in all kinds of spices and plants to the Philippines. And like the Filipino today, its cuisine is a gastronomic feast from different countries and cultures - from east to west.

Filipinos have embraced as their own cuisines form other countries like the noodles from the Chinese, rice and meat dishes from the Spaniards, fast-food from the Americans and even spaghetti from the Italians. All these now form part of the Philippine cuisine - with the Filipino touch, of course.

There are however many Filipino recipes from each region of the Philippines with each region having its own unique specialty.

In Luzon, recipes are more hearty and savory. This region boasts of a rich culinary heritage. Adobo is the most popular, but the taste and ingredients of Adobo varies across the archipelago. In Central Luzon, food is elaborately prepared, while Northern Luzon favors simpler methods. In the Ilocos Region, the most popular dish is Pinakbet, it is a vegetable stew with shrimp paste, Ilocos is also famous for Vigan longganisa, empanada, and crispy bagnet (akin to chicharon). In the Bicol Region, it is spicy dishes that dominate, with Bicol Express (made from coconut milk, chili, and shrimp) being the favorite.

In the Visayas coastal areas, seafood dishes are the most popular. Fresh or dried seafood takes center stage like Kinilaw (ceviche) and Sinuglaw (grilled pork and fish). Simple but tasty dishes are most popular in the Visayas. In Cebu, Lechon (roasted pig) is the most popular.

Grilled Pork BarbequeMindanao’s cuisine reflects its cultural diversity. Bold, versatile, and culture-driven, dishes emphasize fresh seafood and fruits. The use of coconut is ingenious—pressed for milk, oil, and even burnt to create pyanggang. Davao Occidental offers creative twists, like a dish using coconut oil, milk, and cream in a single preparation.

In summary, Filipino food is diverse in each region. Food is a celebration of local ingredients, taste preferences, culture, and traditions. From the street food in Manila to the different provinces in Mindanao, each dish tells a story of heritage and love for good food.
